Halloween Kitty Cupcakes

Equipment

  • Cupcake liners
  • Muffin tin

Ingredients

  • 1 box gluten free chocolate cake mix such as Simple Mills Naturally Gluten-Free Chocolate Muffin & Cake Almond Flour Mix
  • 3 eggs if using Simple Mills cake mix
  • cup vegetable oil if using Simple Mills cake mix
  • 1 Tbsp vanilla extract if using Simple Mills cake mix
  • cup sugar optional, and if using Simple Mills cake mix
  • 1 can chocolate cake frosting
  • 1 box gluten free chocolate cookies such as Glutino Chocolate Vanilla Creme Cookies
  • 1 package jelly beans assorted colors
  • 1 package gluten free black licorice such as Natural Candy Store Organic Black Licorice Laces

Instructions

  • Prepare cake batter according to directions. Allow cupcakes to cool.
  • Frost cupcakes with chocolate frosting.
  • Mash around 6 chocolate cookies with a rolling pin, and sprinkle cookie crumbles on top of the frosting.
  • Cut chocolate cookies into quarters and apply two pieces to each cupcake to make ears.
  • Apply yellow jelly beans for eyes. To make pupils, use small slivers of black licorice or apply chocolate frosting with a toothpick.
  • Cut purple jelly beans in half and put them onto the cupcakes for noses.
  • Slice licorice ropes into desired length and width for whiskers.
